Probably the best thing about eating a Paleo “diet” is all of the bacon! Seriously, bacon is awesome and adds so much flavor to food, and, according to many, bacon is actually pretty good for you. One day, I was happily pinning recipes on Pinterest when I came across these Honey Glazed Chicken and Bacon Bites and new instantly that I needed to recreate them.
I used all clean, organic and paleo ingredients and the kids gobbled them up in a hurry.
Ingredients (I doubled everything to make a giant pan-full)
- 1 pound boneless-skinless chicken breast (cut into strips)
- 1.5 packages bacon (original recipe said thin sliced, but I just used regular)
- 3 TBS raw organic honey
- 2 tsp organic spicy mustard (I used Annies)
- the juice of half a tree-picked orange (original recipe said to use lemon, but the orange made a much more deliciously sweet glaze)
Remember, I doubled the recipe above and filled a large jellyroll pan full of chicken fingers. Using a pastry brush, baste the fingers with half of the glaze.
Place chicken fingers into a preheated 425 degree oven for about 15 minutes. Since I used bigger “cutlet” size chicken pieces and thicker bacon, I had to bake it a bit longer than the original recipe stated.
After about 15 minutes, when the bacon on top starts to crisp, remove the tray and turn the fingers over. Baste the other side with the remaining glaze and return to oven until the bacon is crisp and chicken is done cooking, approximately 10 more minutes.
These were so delicious and were great as leftovers for my lunch the next day. They were even tasty cold since I was away from a microwave at lunchtime and had to eat them on the move. I made them for Bob about a week after this and he even liked them (which is an accomplishment since he rarely seems to like anything).
Have I mentioned yet that I’ve lost 27 pounds? Yeah. Good food!
