I have not been doing a fabulous job at my sugar detox this time around. I’m not sure why I’m having such a hard time getting my head into the game! I ate fabulous on Sunday, even declining a much desired glass of wine, but then on Monday I caved and ate what was left of my organic chocolate-toffee bar. The only bright side I can see to that is that now I have ZERO sweets left in this house and that means I can’t eat anymore.
Breakfast on both days was my standard three egg scrambled with bacon, spinach and mushrooms. I really can’t explain why I don’t tire of this combo since I eat it so often, but I really don’t. I love it.
My lunch yesterday was leftover bacon-wrapped chicken that I also had for dinner the night before. It is SO easy to make!
- 2 pieces of organic, un-cured bacon
- 1 piece of chicken breast (free-range and organic if you have it)
- Organic dijon mustard.
- salt/pepper to taste.
Take about a teaspoon of dijon and coat your chicken breast with it. Add salt and pepper to taste. Wrap the two pieces of bacon tightly around the chicken. Place on pre-heated George Foreman grill and cook for 15 minutes (adjust time depending on size of chicken…mine was pretty big and the bacon was thick so it took a little longer than average).
Sunday night I had the aforementioned bacon-wrapped chicken with a side of sauteed broccoli. Sauteing broccoli in ghee and garlic is one of my favorite ways to prepare the little tree-like veggie. The broccoli florets absorb the ghee (which is clarified butter) and they stay crispy rather than mushy. Nobody likes mushy broccoli! Monday night I had a couple chicken burgers that I picked up from Costco with a side of zucchini. I’m a pretty simple kinda gal and don’t usually get to fancy with my food, especially during the week when there is nobody home to appreciate my culinary efforts.
I tried my hand at bulletproof coffee this week and I have to say that I was pleasantly surprised that it didn’t taste like ass! I’ve never been able to drink my coffee without copious amounts of sugar and cream, so to make it this way was a big leap out of my comfort zone. I made a small cup on Sunday morning and was intrigued and didn’t immediately spit it out. So Monday morning I made a cup using my raspberry flavored coffee and I have to admit that it did NOT taste very good. I’m sure it’s the artificially flavored raspberry beans that ruined it for me. So while at Target yesterday, I picked up some organic coffee from Archer Farms and when I made my coffee this morning it was FABULOUS.
I am happy to report that I was finally down two more pounds this morning after being stuck for two months at the same number. This puts my total weight loss at 85 pounds. I can’t believe I’m only 15 away from ONEDERLAND! So odd to even think about actually losing 100 pounds, it is such a surreal feeling.
