People think that by adapting a Paleo way of eating that they have to give up all the foods that they used to love. Well, that’s just NOT TRUE! Of course, you have to find ways to adjust recipes to make them healthy, but it can be done with most things. I’ve made banana ice cream, buffalo chicken and now pancakes…all Paleo and delicious!
I’m not clever enough to create all of my own recipes. I just don’t have the time to experiment like others. But I love to try the new things that I find on Pinterest and this particular recipe originally came from Civilized Caveman Cooking Creations. It had ingredients that I had on hand and his stuff always sounds good so I tried it. I found a few other pancake recipes to try, too and I’ll link them here in case you want to check them out.
For this recipe all you need is:
- 3 bananas
- 3 eggs
- 1/2 cup almond butter (organic/unsweetened like MaraNatha)
- 2 tsp cinnamon
Add all of the ingredients into a food processor, blender or Ninja (I used my beloved Ninja). Blend until combined and creamy like a batter.
Heat skillet on medium heat, melt 1 tbs coconut oil into pan and pour about 1/4 cup of batter onto skillet/griddle. Cook for about 2 mins per side. It will bubble when it’s about ready to be flipped. They stay together well and flip easily. Mine were made about 3″ in size.
- 1 pound of fresh strawberries, sliced
- 1 Tbs Organic Coconut Sugar
Put your sliced strawberries into a bowl and sprinkle with coconut sugar. Let set at room temp for about 15 minutes (or while you cook your pancakes). Spoon generously over your pancakes in place of syrup!
These pancakes were very tasty. They were a little crispy on the edges and soft in the middle. They held up well with butter and strawberries piled on top. The first bite was a little weird because they were very “bananna-ey” but once my brain accepted that they were not flour pancakes it enjoyed every bite!
