I love to cook but do not claim to be a great chef.  Nor, am I a very good food photographer.  BUT…I can follow a recipe like nobody’s business and sometimes, I can even tweek an existing recipe to suit my own Paleo needs.  And that’s what I did with this Ginger-Lime Marinade.

I hadn’t planned on sharing the recipe, so I didn’t take any good pictures (not that my good pictures are really that great), but it was such a hit with the family (even the kids) that I decided I would pass along this great recipe.  I hope you enjoy it!

Grilled Ginger Lime Chicken

4 boneless skinless chicken breasts
1/4 cup Coconut Aminos
1/4 cup fresh squeezed lime
1/4 cup olive oil
2 Tbs fresh grated ginger
1/2 tsp pepper
3 cloves minced garlic
zest of 1 lime

My chicken had been frozen in a big ziplock bag (because I like to buy in bulk on sale).  It was about half thawed I guess when I tossed this marinade into the ziplock and let it thaw on my counter the rest of the way.  I’m sure you can put the marinade in on fully thawed chicken and it would be just fine.

Combine all of the marinade ingredients into a blender/food processor and blend on high until fully combined.  Toss in with the chicken and let marinate at LEAST 2 hours.  Mine sat in marinade for approximately 4 hours.

You can probably bake or pan fry these and they would be great but you really should grill them.  SO FANTASTIC!  Grill.

I was stupid excited about buying fresh ginger root this week.  This recipe was the first time I had ever used it.  Let me tell you….Pain.In.The.Ass.  I asked on Facebook if anyone had any tips for future ginger grating because honestly, it was too much work for this working mother.  I would LOVE if it you chimed in with any tips.  I love ginger, but if it’s going to be this big of a mess then I will go back to powder.
