Happy Holidays!

How was everyone’s Christmas, Hanukkah, Kwanzaa, Bodhi Day, Boxing Day, Yule and Winter Solstice (any any other Winter holiday I might have missed!)??  My Christmas was fabulous! The holiday’s are always stressful for so many reasons, and this year was no exception.  But it all ended up good, Santa made my boys happy and it was a lovely day filled with family and happiness. Like many people around the world, I used the entire time since Thanksgiving to put aside my strict Paleo Lifestyle diet and just enjoy myself.  I enjoyed baking (and eating) good old-fashioned sugar cookies, fudge, apple muffins, etc etc.  I tried to stick to my Paleo plan as much as possible but did not beat myself up over enjoying good food and family time.  I stuck with good breakfasts (usually eggs and veggies) and most lunches were healthy(ish).  But dinner and weekends and shopping…oh my! ...

My mom calls me a “food Nazi” and says that I am as “bad as a reformed smoker.” I can’t help it. I see the things people around me are eating and I compare it with all that I have learned over the past few months and I honestly just want to HELP them. I want to teach people that sugar is bad, grains are toxic and the standard American diet is tragic. But, who am I? I am no expert. I’m not a doctor or nutritionist. I only know what I read and what I take to heart. Bacon Wrapped Chicken Fingers

Probably the best thing about eating a Paleo “diet” is all of the bacon!  Seriously, bacon is awesome and adds so much flavor to food, and, according to many, bacon is actually pretty good for you.   One day, I was happily pinning recipes on Pinterest when I came across these Honey Glazed Chicken and Bacon Bites and new instantly that I needed to recreate them. I used all clean, organic and paleo ingredients and the kids gobbled them up in a hurry. Ingredients (I doubled everything to make a giant pan-full) 1 pound boneless-skinless chicken breast (cut into strips) 1.5 packages bacon (original recipe said thin sliced, but I just used regular) 3 TBS raw organic honey 2 tsp organic spicy mustard (I used Annies) the juice of half a tree-picked orange (original recipe said to use lemon, but the orange made a much more deliciously sweet glaze) Wrap one piece of bacon around each...
